Snake Gourd sounds little scary but it is a very healthy vegetable which is widely used in most of the Asian countries. Since it is bundled with a lot more impressive health benefits, I have selected this vegetable for today's delicious and quick chutney recipe.

Ingredients

  1. Snake gourd pieces -2 cups
  2. Curd - 1/2 cup
  3. Green Chillies - 10
  4. Salt - 1 Tsp
  5. Garlic cloves - 5
  6. Red Chillies -2
  7. Curry Leaves -5
  8. Corriender
  9. Tamarind juice - 1 Tsp
  10. Chana Dal - 1Tsp
  11. Ura DAl - 1/2 Tsp
  12. Cumin Seeds - 1 Tsp
  13. Mustard Seeds - 1/2 Tsp

Cooking Procedure

Cooking Time: 15 mins (including peeling off & chopping)

  1.  Add 2 Tsp of Oil to the hot pan
  2. Add chopped Snake Gourd pieces and Chillies to the hot oil and fry them till they become soft.  Switch off the stove and let it cool down.
  3. Add Garlic cloves, salt, cumin seeds and give a blend
  4. Add these fried chilies and snake gourd pieces, tamarind juice to the blender and make the fine paste. Keep the paste aside.
  5. Add 2 Tsp of Oil to the same pan for the seasoning.
  6. Add split red chilies, garlic cloves, mustard seed, cumin seeds,  Urad Dal and Chana dal to the hot oil.
  7. Finish the seasoning by adding curry leaves and chopped coriander.
  8. Add the seasoning to the paste and transfer to a bowl.
  9. Tasty and healthy Snake Gourd Chutney is ready to eat with Rice or Dosa or Curd Rice.
